Vegetable donuts, Let's take vegetable by snack Part 2

Yesterday, I tried to cook the vegetable donuts ( Carrot donuts and Kale donuts) first time.

These were yummy! These donuts include a rice flour, so we can enjoy elastic texture like rice cake. And these donuts are good for children who have an allergy of the egg because the egg isn't used for these donuts. I will describe the recipe of the vegetable donuts.

[Ingredients]
• Vegetable, 30 g
( In case of using a Kale or spinach, add one table spoon of water and total of veggie and water is 30g.)
• Corn starch, 25g
• Rice flour, 35g
• Tofu, 40g
• Sugar, 20g

I've used organic carrot and kale for donuts. I tried to cook the Filipino taste by using coco sugar!

[Provedure]
1. Grate the Carrot. Toss the Kale and water into the blender.

2. Mix all ingredients and keep it in the refrigerator at least 30 min. After cooling, roll it into one bite size. Fry it.

My children ate the carrot donuts only. I think the Kale donuts were little bit bitter for children. I and my husband liked the Kale donuts. It is also delicious to eat them with honey.

Versatile foodstuff, 『Salted chicken breast』

I forgot to take a photo of today's Baon!! This is second time to forget taking a picture of Baon. At first time, I noticed before my son leaves the house and I could ask my father in law to take a picture of Baon. This time, I noticed about this thing during lunch time. I could not do anything.

I will introduce a recipe of 『Salted Chicken Breast 』. 

We can use the salted chicken breast for variety dish in spite of the procedure of cooking is very easy. 

Chicken breast is very healthy foodstuff because
・ Contains high-quality protein
・ Contains many amount of anti-fatigue substance "imidazole dipeptide" that helps to prevent to be tired.

I had understood the merit of chicken breast but I didn't like to eat it because I had not good at feeling of dried out of chicken breast.

However, from I met this recipe, I really came to like to eat chicken breast! It's surprisingly delicious!!

【Ingredients】
・Chicken breast fillet (without skin), any pcs. as you want
・Salt, 1/2 ~ less than 1 tsp / 1 pc. chicken breast
・Honey or Sugar, 1/2 tbsp / 1 pc. chicken breast
・Brandy or Sake,  1/2 tbsp / 1 pc. chicken breast
・Black pepper, a little
・Nutmeg, a little

【Procedure】
1. Mix the all ingredients in a food keeper (e.g. Zipplock). Marinate it in the refrigerator at least one day. (We can keep it maximum one week in the refrigerator.)

2. Before when you cook it, cut a little pc of salted chicken breast and boil it and taste it. If you feel much salty, put salted breast chicken into the water 30 min.

3. Boil, Saute, Fry, or Grill, please select the cooking way along the purpose of each dish.  

☆Ham of Salted Chicken Breast☆

Wipe off the moisture of marinated salted chicken breast Put the salted chicken breast on the cling wrap and roll it like a candy. Tied it with a string.

Put it into the boiling water then stop heating. Wait until it cools down. Enjoy eating the ham after chilling well in the refrigerator. 

☆Topping of Pho☆

Boil the sliced salted chicken breast 2 min and use for topping of pho.

☆With Salad☆

Boil the cut salted chicken breast 2 min and use for topping of salad.

☆Saute with vegetable☆

Saute the sliced salted chicken breast with Kale, Garlic and Olive oil.

Simple and Easy, Healthy and Delicious!!

I will introduce a recipe of " Carrot peperoncino". 

The peperoncino is formally called Spaghetti aglio e olio peperoncino  ("spaghetti with garlic, dried red chili, and olive oil" in Italian) is a traditional Italian pasta.

"Carrot peperoncino" is not pasta, so I think that it would not be called a peperoncino. But I call "Carrot peperoncino" this dish because "Carrot peperoncino" is so optimal as the name to call this dish.

The carrot include a lot of carotene that is  dissolved in oil easily. So we can absolute more carotene by eating carrot with oil. This dish uses olive oil that helps to absolute the carotene, very healthy! The ingredients are carrots, garlic, and olive oil only ( I didn't use dried red chili because I prepared this dish for children. I like hot version!), very simple! Procedure of this resipe is so easy. And delicious!!  

This time, I used organic carrot grown up by "Holy Carabao".
I was surprised to strong smell of the carrot when I peeled the carrot!!

[Ingredients]
• Carrots, 2 pcs.
• Garlic, 3 cloves
• Olive oil, 3 tbsp
• Salt, a little

[Procedure]
1. Slice the carrots into thin by peeler.

2. Chop the garlic. Sauté the chopped garlic with olive oil and salt.

3. When you feel good smell of garlic then put the sliced carrots. Sauté it 30 sec.


My children likes this dish!! My son was able to peel carrot and enjoy cooking, so let's try with your children.

The internet was not working last night, so I couldn't publish the new blog yesterday. I will publish yesterday's blog.

Today's Baon

• Fried rice with ketchup
• Hotdog
• Asazuke (Cucumber, Carrot, and Radish)
• Scrambled egg
• Boiled Cauliflower and Broccoli

This morning, when Lino saw his Baon, his face become so delight! And he said, "Yehey!  I love it!! Thank you Mama!".
I was so happy to be able to see his delight face and hear about such words!

However, can you understand what did I make? This is a car... 
The window and number plate are fried egg white. The lights are fried yolk and boiled Carrot. His name and frame of window are seaweed.

What the theme of Baon will Lino request for me next week? I will try to make the Baon for Lino's smile next week too.

Sleeping Cat Zzzz....

Today's Baon

• Cat rice ball (The gray part : the rice mixed with ground black sesame.)
• Lunpiang shanghigh 
• Crisp salad of potato and carrot
• Rolled egg
• Boiled okra

This time, the request of Lino was a cat. I really enjoyed and concentrated to make "Cat" while thinking Lino's smile this morning, so I forgot to prepare the Baon for husband!!!! Sorry papa. Hehehe.

In Japan, the bento like this is called "Chara-ben". Chara-ben is a shortened form of character bento, or boxed lunch. Elaborately arranged lunch that features food decorated to look like famous characters from movies and such.

My friend asked me that will you make chara-Ben until what age of your children?

In Japan, the majority of elementary and junior high school provide a school lunch. So, I think that maybe Japanese mums make Chara-ben for the children age of around 6 to 7.

My mother often made for me an interesting lunch when I was kindergarten student, and even if I became a high school student, she made it some times. I remember that it was so fun and delicious!! This memory is a source of passion for making the Chara-Ben for my son. As long as the children request, I want to continue to make the Chara-Ben!!

I will introduce the recipe of "Crisp salad of potato and carrot".

[Ingredients]
• Potato, 1pc
• Carrot, 1/2 pc
• Garlic, 1 clove
• Rosemary. a little
• Salt and Pepper. a little
• Olive oil, 1 tbsp

[Procedure]
1. Cut the potato and carrot into thin strips.

2. Boil it 1min. (Check the color of potato! The potato is white at first and it becomes transparent. When the potato becomes transparent, it is a sign of  being boiled. If you boil more than 2 minutes, the crisp of potato is disappeared.) After boil, wash with running water immediately.

3. Sauté garlic with Olive oil, salt, pepper, and rosemary. Mix it with potato and carrot. It is good taste also to use bacon or anchovy.

Theme of Baon is Dog

Theme of today's Baon that Lino asked me to make last night was "Dog". So I made a plan on how to make the "Dog" for his Baon before I slept. It was so fun for me to think about the ingredients, cooking procedure, and my son's smile!!

Today's Baon

• Dog! (Rice ball & meat patty (ground pork, onion, onion leaks, ginger, and garlic))
• Rolled egg
• Sautéed vegetables
• Boiled okra

[Procedure of making dog]

Make a part of ear to shape the meat patty. Sauté the meat patty.

Make the rice ball using cling wrap.

Cut the dried laver seaweed into the part of eyes and nose, then decorate them.

Japanese Soul Food : Miso soup

In here Philippines, There are a lot of Japanese restaurant crowded with Filipino customer.  What is surprising is that many Filipino are enjoying to eat Sashimi and other Japanese food.

Do you know Miso soup that is one of the Japanese soul food? In Japanese style dish, Miso soup is imperative food. There are rich variety ingredients of Miso soup. Of course vegetables, mushrooms, seafood, pork and eggs are cooked for Miso soup, so we don't get tired of eating Miso soup even if we eat  Miso soup everyday.
There are many kind of Miso. It is said that the taste of Miso soup is different in each home. Miso soup is Mom's cooking for Japanese.

We can obtain the nutrition that are dissolved from vegetables by eating soup (not only Miso soup). In addition, by eating the soup at the meal, we can feel of fullness easily and it prevent overeating. 

I have introduced some dishes in this blog, almost these dishes were for lunch box.  I would like to introduce the recipe of other Japanese food, not only for lunch box in the future.

Last time, I was asked from a mother of my son's classmate that the recipe of Miso soup, so I will introduce the recipe of Miso soup this time. 

This time's Miso soup is called "Tonjiru" that is one of the miso soup that include a lot of ingredients. "Ton" of the Tonjiru means pork.

[Ingredients]
Radish, 1/2 pc
・Carrot, 1/2 pc
・Potato, 1 to 2 pcs
・Onion, 1 pc
・Onion leaks, 2 pcs
・Pork(bacon slice), 4 slices
・Dashi, 1 tsp
・Sake, 1 tbsp
・Miso, 2 to 3 tbsp
・Water, 3 cups

[Provedure]
1. Cut all vegetables like following picture.

2. Put these vegetables and water into pan and heat it. Boil vegetables 5 to 10 minutes.

3. After cooked vegetables, cut the pork like following picture and put it into the pan. Boil it 3 to 5 minutes. (You can sauté the pork and vegetables before boiling. I don't want to use oil, so my recipe is only boiling.)

4. Put Sake (left of picture) and Dashi (Right of picture) into the pan. We can buy these ingredients at foreign country food corner of any supermarket.

5. Put the onion leaks and Miso into the pan while dissolved. Please adjust for your taste by adjusting amount of the Miso.

Let's take vegetable by snack!

There is no Baon until tomorrow because the school is during the health break.

Yesterday, when I visited to church, I saw some children who were eating a snack during the Mass started from 11 o'clock.

I thought that the children could not eat the lunch enough with their stomach full.

Children's stomach is small and they can not obtain enough nutrition from 3 time meals only. So, the snack is important for children. However, if we mistook the timing of providing the snack and amount the snack for children , the children can not eat 3 times meals enough. 

We should be careful the timing of providing the snack and amount  of the snack!!

I would like to introduce healthy snack! This is a "Cake salé" in French. The Cake salé is unsweet pound cake and it is good for breakfast also. The cake salé is not used butter and includes a lot of vegetables, so the cake salé is very healthy!!

This time, I will introduce the Cake salé of Kale and Bacon.


[Ingredient (for 2 pounds cake molds)]
・Egg, 3
・Extra virgine olive oil, 75ml
・Milk, 150ml
・Flour, 150g
・Salt & Pepper, a little
・Cheese ( Parmesan or Processed cheese), 75g
・Kale, 2 pcs (Holy Carabao's organic Kale)
・Onion, 1pc
・Bacon, 30g

 [Procedure]
1. Cut Kale, Onion, and Bacon like following picture. Pre heat the oven to 180℃ .

2. Sauté the vegetables and Bacon with a little Olive oil.

3. Mix the eggs, milk, and Extra virgine  Olive oil.

4. Mix the sautéed vegetables and bacon, salt & pepper, and flour.

5. Cut the cheese (if use processed cheese) and mix well.

6. Put the mixture into the pound cake molds and put some cheese on the top.

7. Bake it in the oven at 180℃ for 40 minutes.

The wonderful vegetables of "Holy Carabao"

I could buy the vegetables of "Holy Carabao" ( http://holycarabao.com ) which I really wanted to buy.
These vegetables are all Organic!!

I had been interested in Organic vegetables from few years ago because the organic vegetables are so good for our health! In Japan, the organic vegetables are  so expensive, so I could not buy the organic vegetables. When I moved in to Philippines, I still thought that the organic vegetables are so expensive as same as Japan. But my friend told me about "Holy Carabao" and the vegetables of Holy Carabao are not so expensive, even if these vegetables are organic. Additionally, they can provide rare vegetables which we can not buy at supermarket, for example Tatsoi (Komatsuna, Japanese name), Kale, and so on.

I will introduce a recipe of Tatsoi today.

"Komatsuna no ohitashi (Boiled Tatsoi eaten with soy sauce)

The ohitashi is very simple and traditional Japanese home cooking. 

[Ingredients]
・Tatsoi
・Japanese soy sauce
・Katsuobushi*
*Katsuobushi is also known as okaka is the Japanese name for dried, fermentell, and  smoked skipjack tuna.

[Provedure]
1. Boile the Tatsoi 1 to 2 minutes.

2. Wash the boiled Tatsoi by water.

3. Squeeze the Tatsoi, and then cut it into 3 to 4 cm.

4. Dish up the Tatsoi on a plate and top with Katsuobushi. Please eat with Japanese soy sauce.

We ate all !!

Tofu recipe, Part 2!

Today's Baon

・Rice with Furikake 
・Fried Tofu
・Sautéed thin strips cut potato and carrot, broccoli, curry flavor
・Scrambled egg with tomato, Chinese taste


Do you notice that I has prepared two Baons from yesterday. It is for my husband. He have to go to different office and he also bring the Baon 3 times a week!
So, I will try to cook more healthy food.

- Tofu recipe (fried tofu) -

[Ingredients]
☆Tofu, 1 pc 
☆Flour 2 tbsp

Marinating mixture
☆Soy sauce, 3 tbsp
☆Honey, 1 tbsp
☆Water, 3 tbsp
☆Black pepper, a little
☆Garlik, 2 to 3 cloves
☆Ginger, small pc

[Procedure]
1. Freeze the tofu. Don't open at that time. The color of the Tofu become brown, it is no problem.

2. Before cooking, de freeze the tofu. Cut the tofu into 1 to 2 cm.

3. Squeeze the tofu by hand to extract water.

4. Ground the ginger and garlic and mix with all ingredients of the marinating mixture.
Marinating the squeezed tofu 5 minutes.

5. Cover it with the flour and fry it.

These foods were lunch for my dauter and parents in law.
Only me ate different menu of lunch at the office.
